By hand labour into small crates, cagettes

Clay / shale
Steep slopes (mountain Fitou )
Mediterranean climate : very dry air , medium annual temperature of 15°C, 339 days of sunshine each year.

80% Maccabeu (fruity, fresh, floral perfume, lively)
20% White Grenache (smooth, delicate)

19 hl/hectare

Method of wine production (“Vinification”) :
Indigeneous yeasts
Pressed under pneumatic press.
70% steel vat, 30% barrel
Fermentation at a controlled temperature of 16°C maximum

Maturation (“Elevage”) :
Stainless steel vats

Taste (“Dégustation”) :
Color : Yellow-green, a little straw coloured
Nose : Floral aroma
Palate : Dry. Finally very aromatic
